{RECIPE} Weeknight Pasta

Since my husband works in the restaurant industry he is away most nights. And most days. Which means the kids and I have candlelit dinners consisting of a toddler's palate. After one too many star-shaped sandwiches, I recently decided I should start making myself something a little more "advanced." 


My friend Kate told me about a great website called Find Your Glow where I found a recipe for "Weeknight Pasta" and gave it a try. It was a cinch to make and tasted delicious! A perfect go-to pasta for sure. Here are the ingredients:
Ingredients
1 ½ cups pasta
2 slices bacon, chopped
½ onion or shallot, chopped
3-4 garlic cloves, chopped
10 cremini mushrooms, sliced
1 bunch kale, beet greens, escarole or swiss chard
Sea salt, pepper and/or red pepper flakes
Grated Asiago or Parmesan cheese

I took two photos of the ingredients cooking, but unfortunately didn't snap a finished product pic because, well, motherhood called.

{RECIPE} French Toast Muffins

My kids love breakfast.  So much so that we often have it for dinner.  Like... a lot.  In need of some new inspiration, I logged onto Pinterest this afternoon and saw a pin for French Toast Muffins by my friend Scarlett.  After seeing that I already had all of the ingredients in my cupboard, I decided to make them tonight to complement the kids' "cheesy eggs." 

Let me tell you, these muffins are amazing.  Ahhhmazing!!!   And the ingredient list is so simple.  See for yourself...

1/3 c. butter, melted
1/2 c. sugar
1 egg (preferably room temperature)
1 1/2 c. AP flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 c. milk
Topping
1/2 c. sugar
1/2 c. butter, melted
1 tsp. cinnamon

{RECIPE} Mary Love's Sangria

Once upon a time, Suz's mom was a stewardess for TWA. Her route was New York<--->Spain where she met lots of people and served lots of Sangria. Fortunately for many, she brought home that Sangria recipe straight from first-class... and made a few tweaks. In celebration of Cinco de Mayo and Mother's Day, we're sharing Mary's magical mix should you be thirsty for some potent potion.

MARY LOVE'S SANGRIA

1 Small Bottle of Burgundy



1/2 Shot of Cognac



3/4 Cup of Orange Juice


The Juice of 4-5 Oranges


The Juice of 1 Lemon



3/4 Cup of Sugar



Slice 1-2 Oranges and Soak in Pitcher



Viola!


Says Mary: Sangria is best tasting when made 4-8 hours in advance of serving. Taste and see if you need to add some additional sugar or orange juice... or possibly a tad more Cognac. Be sure to garnish with orange slices and serve over lots of ice!
